
Babagonoush (spelling?? lol)
1 large eggplant
1/4 cup lime juice
1/4 cup tahini
2 garlic cloves minced (or 2 tbsp garlic powder)
1.5 tbsp grapeseed oil
salt to taste
Preheat oven to 350 degrees F. Poke holes in eggplant and cook on lightly oiled pan for 30-40 minutes. Place in cold water for 10-15 mins then remove skin. Place eggplant and other ingredients in food processor and blend together until smooth.

1 cup green leaf lettuce
1 cup kale
1/2 cup cooked mushrooms
1/2 cup cooked quinoa
1/4 cup onion
1/4 cup red pepper
1/2 cup black and green olives
1/2 cup cucumber
1 avocado
1 tbsp basil
1 tsp sea salt
1 tsp cayenne pepper
1 tsp oregano
1 tsp onion powder
1 tsp lime juice
2 tbsp grapeseed oil
Toss together
